    Somehow i feel kind that the medieval video was more cinematic and it felt like there was more inspirational shots, like how much longer the cooking process was or how you set up the table or the shots from the food etc. compared to this video. Kind of wish it was the same format so I hope if you do continue the series, you'll do it like the medieval video since it set you apart from all the other videos i have seen here in YT. Also hope you take this as a constructive criticism not a complain 😕😓😖

      Thanks for the constructive criticism! This is the type of video I had the capacity for (as well as budget) at this time ☺️ I think as well the fact that the medieval video was shot in winter made a big difference, as I used candlelight a lot, and that tends to make a lot of shots more cinematic feeling. This time around almost all the shots were during the day.

    Merry Solstice! looks delicious - cept the salmon. thank you for this , we are in the throws of awful summer with temperatures at 96F (35.55 C) Its humid as well. so our foods as long as its watered are growing like weeds. time for me to go eat some proteins as my Norse ancestors are telling me I need more every time I go shopping .

    If you had had a medieval meal from England then you would have had far more vegetables in your diet, meat was more for the rich so the peasants were more vegetarian. That is why looking at your recipies I was wondering what country were you using from and if was scandanavian it made more sense but cereals of various kinds were a big deal in medieval diets.

    Not quite the same but you used to be able to buy mutton ham here in New Zealand. Seeing you with the pickled lamb made me think of it. It tastes just like ham does and I think its quite an old thing like old english. Maybe because pigs tended to be culled in the first cold of the year but lamb and mutton would be safer pretty much all year for curing processes.

    In the last one, I was concerned about you saying it was all rye bread and rye will still trigger wheat allergies if I remember. And the bread you had looked all fluffy as hell and surely wasn't ALL rye. There is some dense "iron age bread" you can get here in Denmark and it's just nuts and seeds stuck together. That will fill you up for sure and not ruin your intestines. I will say, there are loads of young dandelions leaves from like May at least. At least here in northern Jutland, Denmark. That would be the same latitude as a lot of southern Sweden. Did they not attempt to make jams or preserve fruit? What there is a lot of here by the fjord is sea buckthorn. It's supposed to one of those "power berries". The thing is, they taste so bitter and tart before first frost. That also means the birds won't start to eat them before first frost so maybe people cut berry heavy branches off right before they expected first frost and kept them safe and protected from birds as they got the first frost. I really have been working myself up to making savory porridge. I just never had quite the guts yet. It should be more popular with poor students. You could probably do it in a microwave.

      Thank you for the concern! It is 100% rye though. I know the baker who makes it personally. It’s a 100% sourdough rye and it can be quite fluffy if it’s made in a specific way.

    Very tempted to try the porridge custard variation next time I want oatmeal porridge! I love all sorts of custards and have even perfected my method of making custard in the microwave... And I didn't know that beans were from the Americas, I knew about corn and potatoes and tomatoes... Yay, welcome to the stained feet club, I always end up with spots of whatever I'm making on my feet cause I'm usually barefoot in the house. I also have trouble doing fried eggs with runny yolks unless I cover my pan and add a bit of water to steam them a bit, I have a textural aversion to raw egg white so I'd rather solid yolks than runny whites. I've at least got it mostly dialed in for boiled eggs now. Thanks for sharing these, that was a great adventure! And I hope you get to make that fish porridge some other time without insect intervention!

    I had Viking food in Bergen, Norway, and I remember I was disappointed it tasted so bland. But, I am guessing that our modern palate is more used to lots of spices they did not have, so even if it tasted less spectacular, I could appreciate the historic value of it. Oh, and we have plukkfisk here as well. Might not be the same recipe, but I do love it. In addition, drinking "sour milk" or kefir, with fish like the mackerel (though not smoked but cured), is very common here. Some also use raw onion on the side.

    These food weeks are very interesting indeed. In Sweden we have something we call the "Husmanskost". It is the traditional food of our country. Would be interesting to see what you Husmanskost (litteraly means What you eat as staplefood in your country's culture) is. As a person with wheat problem you should do the rye bread/pear/cream-thing we have here. It is a delicious dessert.

    Vikings typically ate only two meals daily. Breakfast mainly consisted of leftovers from the prior day's evening meal.

    I wish smoked fish was a bit less expensive where I live. I could never afford enough of it in decent quality to eat so much of it in one week. even though I love it. I remember that salmon was up until 200 years or so just a very common fish. it was poor people's food because there was so much of it. house maids contracts contained paragraphs about them not having to eat salmon more than 3 times a week... and now I'm thinking of savory oatmeal topped with some sort of vegetables and smoked fish. all crumbled together into one layer on top of the oatmeal. all in one bowl. all to be eaten with one spoon....

    My whole maternal line is genetically Scandinavian, and I can't stand fish, except for salmon and herring. I also hate the cold. It goes to show that culture shapes who we are, as opposed to genetics. This is a great video!

    I started wearing rabbit lined jackets. I'm sorry, but down encased in synthetic fabrics is just as bad as pure synthetic insulation. Wool is super heavy and even sheepskin wears you down. Rabbit? So light, so warm, so soft and so plentiful (I buy the skins of mature meat rabbits).

    I have alpaga loden. I can testimony it is weather resistant. In winter, I put wear 2 one other another one and get never cold nor wet + 100 natural alpaga wool. The con is the result of the plus : it keeps really warm. This weather resistant fabric might be useful to replace plastic which is too often décolorated and destructurated from UVs. Vax is flammable but not less than nylon or plastics.Thanks for video.
